The Quest

The quest for barbecue. Ah, 'tis a noble quest indeed.

There are some definite goods and bads in the quest for BBQ. First and foremost, there can only be one joint, no chains invited, chains is bad. Nothing will get you removed quicker from the list of Skatetruck approved BBQ joints. We all know the blaspheme to food that is the dreaded chain, especially (especially!) when it comes to BBQ shacks.

For example Whitt's is way bad. This BBQ is cooked in Ashland City and trucked later to all their stores. Bad BBQ karma.

Pork BBQ is king, it is good. Some folks like their pork pulled, others prefer it chopped. Ribs is way good. Mustard based sauce is bad, ugh. A red sauce, or three is good.

Beef BBQ is an oxy-moron, beef is for making steaks and meat-loaf, beef BBQ is bad. On the other hand, beef brisket is good, if done correctly.

Cornbread is good. A take on a potato-salad is good. Mayo based slaw is good. Vinegar based slaw is bad, that's for chinese food and Cajun.

A gravel parking lot is usually a good sign. A gravel parking lot with a shack and a shack out back is damn good. Being able to smell that shack for a couple mile radius is good.

the last time I went to chattanooga to visit christopher we went hillbilly willies bbq...mmmm good.

I don't know if you could call hillbilly willies upscale but it's nice and clean...I got the sampler which I got to choice 4 things and I chose chicken, chopped pork, brisket and ribs...this is wet BBQ...I think I like dry..they had cornbread muffins that were great..baked beans...mmmm..the chicken was my favorite...chicken done right is hard to beat..big al

Back when whitts BBQ in Dickson was Bob Cherry's BBQ the beef briscut sandwich with the sweet sauce (major ingredient brown sugar) was to die for, with those melt in yo mouth o-rings mmmmm. As for pork, I like mine A little on the moist side, pulled. slaw, I'm with you Peewee vingar is out. Mayo is good with or on anything.
